I set up one IPTV capture card with 5 https channels.
Works fine, got the guide data, can record.
However, if I try to record a show on more than one of these channels at the same time, only one gets recorded and the other is marked as a conflict.
I went into setting and set max streams to 5, but that didn't fix it. How do I configure it to act like a multiplexed OTA channel and record multiples at the same time?

At the moment you must create another capture card and connect that to the same video source. You do not need to enter a URL and do a channel scan like you have to do for the first one, connecting to the video source is enough.
The good thing is of course that you do not need to buy addtional hardware, for IPTV the capture cards are just software.
It would be great if additional capture cards were created automatically, like how it is done for DVB and ATSC. This is somewhere on my wishlist.

Thanks, I got this working the way I want. Adding the extra cards and just linking the video source worked. I have 5 total and can record all of them at once no problem.
As far as changing how to do this, now that I understand how it works, it makes sense that it works this way. I don't think it needs to change.
