A common cause of the "PLEASE WAIT" message is mythfrontend being out of sync with start channel number (set when you used mythtv-setup>Input Connections). I have never used a touch screen with mythtv.
As a complete guess, map a gesture of your choice to produce the Escape key (no idea how to do this)

You are correct, it is a known issue, and is not limited to Raspberry Pi running Raspbian Buster.

You need to check the mythbackend log (/var/log/mythtv/mythbackend.log) the last few lines may give a clue as to why it is restarting.
Restarting too many times usually means something is wrong after using mythtv-setup, although it can also be due to network problems.

One thing you might also want to do on the Pi4 is run sudo rpi-update which will bring in the latest firmware and kernel. I would not normally recommend this, but the Pi4 is a fast moving target for changes as bugs are being found and fixed. The firmware and kernel from rpi-update are in advance of ...
